Double-Boiled Bird's Nest with Kabocha Pumpkin and Red Dates

By Alina @ TLY

This bird's nest dessert double-boils soaked nest together with cubed kabocha pumpkin and red dates in a lightly sweet rock sugar syrup, served warm in bowls rather than in a hollowed pumpkin shell. The kabocha turns soft and faintly sweet as it cooks, the red dates add a gentle depth, and the rock sugar keeps the whole bowl light rather than cloying.

  • Yield: serves 2-3. Prep: soak nest 4-6 hours or overnight. Cook: 40-45 minutes double-boiled.
  • Kabocha pumpkin is cubed and cooked directly in the double-boil, not used as a serving shell — that presentation is for papaya, not this dessert.
  • Rock sugar is added with the other ingredients so it dissolves gently over the full cook time, rather than stirred in at the end.
  • This is a sweet preparation, so no ginger is used; if a warming note is wanted, ginseng is the traditional pairing for sweet bird's nest, not ginger.
  • Serve in white porcelain bowls while still warm — the kabocha softens further as it sits, so bowls close to done are best.

  • 500 ml water

Method

1. Soak the nest (4-6 hours or overnight)

Place the dried bird's nests in a bowl of cool water and soak 4-6 hours or overnight, until fully expanded and soft. Drain and pick over gently for any stray fine feathers, then set aside.

2. Prep the kabocha and dates (10 minutes)

Peel the kabocha pumpkin and cut into small, even 1.5 cm cubes so it cooks through at the same rate as the nest. Pit the red dates if they aren't already pitted.

3. Double-boil everything together (40-45 minutes)

Place the soaked nest, kabocha cubes, red dates, rock sugar, and water into a double-boiler insert bowl. Cover and set over gently simmering water — not a hard boil — for 40-45 minutes, until the kabocha is fork-tender and the nest strands look translucent. Check the kabocha at the 35-minute mark; if the cubes were cut larger than 1.5 cm, they may need a few extra minutes.

4. Serve warm

Ladle into individual white porcelain bowls, making sure each bowl gets a few kabocha cubes and a red date or two along with the nest and syrup. Serve right away — this dessert is meant to be eaten warm, and the kabocha continues to soften the longer it sits.

Why Kabocha Instead of a Pumpkin Shell

Some pumpkin desserts are steamed and served inside a hollowed-out pumpkin shell, but that presentation is traditionally used with papaya, not with this kabocha preparation. Here, the kabocha is peeled, cubed, and cooked directly in the double-boil alongside the nest, which lets the pieces cook evenly and blend into the syrup rather than needing a separate steaming step for the shell itself.

Frequently Asked Questions

Can I use a different pumpkin instead of kabocha?

Kabocha holds its shape and sweetness well in a double-boil, but a similar dense winter squash can be substituted if cut into the same small, even cubes.

Can I add ginger for extra warmth?

No — this is a sweet bird's nest preparation, and ginger isn't used in sweet nest recipes. If a warming note is wanted, ginseng is the traditional pairing instead.

How much rock sugar should I use?

Start with 30 g and taste partway through cooking; 40 g gives a slightly sweeter bowl. The dessert is meant to stay lightly sweet rather than syrupy.
