Ten Lei Yen sorts its nest by grade. Grade S is our top sort: Blue Label Supreme and Red Label Super, the cleanest and most intact pieces. Every grade in the range is genuine edible nest, hand-cleaned and sorted by cleanliness, shape and size. Grade describes how a nest looks and how carefully it was handled. Whole nest or broken nest, and how do I compare price per gram?
Whole nest keeps its natural cup shape. Broken nest is the same nest in fragments that did not hold their shape, priced lower, and suits everyday bowls, cooking and blending. To compare value, divide the price by the box weight in grams (100g or 250g). A standard serving is 3 to 5 g of dry nest, so a 100g box holds roughly 20 to 33 servings and a 250g box roughly 50 to 83. Portion guide.
