Soak 3 pieces in a bowl of cold water for 5 hrs or overnight. Remove & discard soaking water. Shred each piece length wise, rinse over running water using a strainer. Put the nests, rock sugar, ginseng in the white cooking pot & fill with 2 - 3 cups of drinking. Place the white pot inside the stock pot with 3 inches water surrounding it & cover the lid. Cook over high heat for 25 mins. Once cooled, ready to eat or place in the refrigerator.
