Golden Blue Label Supreme dry edible bird's nest, 250 g box from Ten Lei Yen

Is Bird's Nest Halal, Vegetarian, Vegan or Kosher?

Edible bird's nest is an animal product, because it is made from the hardened saliva of swiftlets, so it is not vegetarian or vegan for most people who keep those diets. Many Muslim families eat it and many Islamic authorities regard it as permissible, but it is not generally treated as kosher. Here at Ten Lei Yen in Westminster's Little Saigon we get these questions at the counter all the time, so we'll answer them plainly.

Is bird's nest vegetarian or vegan?

No, not in the way most people use those words. A swiftlet builds the nest by laying down thin strands of its own saliva, which dry into the cup shape we sell. Nothing in it comes from a plant. No animal is killed to get it, which is why a few vegetarians ask whether it counts, but the nest is still an animal product. Most vegetarians treat it as one, and vegans do not eat it. If you follow a strict diet for ethical reasons, that is the honest answer, and you can decide from there. If you're curious how the birds make it, we wrote about it in how a swiftlet builds its nest strand by strand.

Do Muslim families eat bird's nest, and is it halal?

Yes, widely. Bird's nest is part of everyday and festive cooking in Indonesia and Malaysia, and many Islamic authorities regard it as permissible. Halal-certified producers exist too. Opinions on food questions can differ between schools and scholars, though, so we don't want to hand you a ruling from behind a shop counter.

We also want to be clear about our own boxes. We do not claim that Ten Lei Yen nest is halal-certified. If you need a certificate, please ask us about the specific box before you buy, and speak with your own scholar about what you need. We would rather tell you what we can and cannot document than guess.

Is bird's nest kosher?

We can't tell you it is. Swiftlets have no established tradition as a kosher bird, and bird's nest is not usually treated as a kosher food. We make no kosher certification claim of any kind. A reader who keeps kosher should ask their rabbi, who can speak to their own community's practice.

Is it gluten-free or dairy-free?

As an ingredient, yes by its nature. Dry bird's nest is only the nest itself, with no flour, milk or anything else added in the box, though we don't make gluten-free or allergen claims for our boxes. That changes once it becomes something else. Bottled drinks and prepared desserts contain other ingredients, so read the label every time. The same goes for your own pot at home: rock sugar is the usual partner, but anything else you add, from dates to a splash of milk, brings its own ingredients with it. Our piece on what is actually in ready-to-drink bird's nest shows why the label matters more than the name on the front. We describe our products by what they are, where they come from and how to cook them; questions about diet or medical needs belong with your physician.

Is harvesting the nest cruel to the birds?

This is the question we hear most from thoughtful customers. The short answer is that well-run collection is timed around the birds' breeding cycle, often taking the nest after the chicks have fledged, and the birds then build again. Practices do vary from place to place, which is why we are careful about where our nest comes from. Our nest is Indonesian, imported directly and cleaned by hand. If you want the full picture, read how bird's nest is harvested and cleaned and what happens inside a swiftlet house, rather than having us argue it here.
